Recipe for Wednesday January 18th from Megan & Trish

Easy Roasted Butternut Squash

Love Butternut Squash but not peeling and chopping, here’s your answer.
Preheat oven to 350 degrees
Cut the Squash in half and remove the seeds with a spoon
Place Squash cut side up on a roasting tray
Drizzle with olive oil and bake about 35 minutes.  Start checking around 25 by testing with a knife.
If it goes in without resistance you are good to go.
Serve in chunks or scoop out of the skin to use in soups or purees – like baby food.
